Urban farming: Mushroom cultivation in Johannesburg
How can fungi cultivation seek to address food security and waste management in Johannesburg, South Africa? Mushrooms are a good source of protein, vitamin B6, iron, and antioxidants, among other key nutrients. But given the somewhat technical nature of cultivating them, they remain an expensive and underutilized waste food source. To tackle this, the project aims to set up a mushroom farming practice that partners with cafes, collecting used coffee grounds as a nutrient substrate for gourmet mushrooms. The ultimate goal is to develop pre-fruited mycelium blocks that act as grow kits, allowing easy access to mushrooms as a sustainable solution to food security and waste management under household contexts. The project will be first implemented in Johannesburg but potentially benefits populations around the world.
